First, thanks for responding! Your suggestions were indeed helpful. And, thanks for pointing me towards the Sass book. I took a look at the book on amazon.com and saw where Sass also recommends a 6 to 8 quart as your first purchase and then adding a smaller pan.

I'm going for the 7 quart model. Included in that purchase will be a flame tamer and a glass lid.

Quick question. Which size pressure pan do you own?
