Personally I would opt for the 7 quart model. If you pick up a book like Lorna Sass' "Great Vegetarian Cooking Under Pressure", which is a great book, you might not be able to make some of the recipes. I have mad some in a 4 quart Kuhn Rikon but usually use a 6 quart. The only real penalty for the 7 qt. is that it will take slightly longer to reach full pressure. I have a pressure pan that I use mainly for cooking vegetables on a steamer rack. These get to pressure very fast and need to be watched carefully because of their small size they are very responsive to temperature changes. I use mine almost daily. Hope this helps.
