Adele Davis suggests this way to avoid soaking beans altogether: Bring the cooking water to a rolling boil and s-l-o-w-l-y sprinkle in the beans, being careful not to let the boiling stop. She says this bursts the starch crystals, allowing the beans to cook faster. Use the total cooking time the recipe calls for. I haven't soaked a bean in 20 years and haven't noticed any difference.
