| | Subject: | Why do beans burst in pressure cooker? | |
Date: | September 17, 2005 at 6:34 am PST |
Hi All.... I have cooked some "Cranberry" kidney beans in my pressure cooker today, after soaking them overnight. I followed the directions to cook for 20 minutes after the pressure release valve pops up. Since I had two batches to do, I took the pot off the heat after 20 minutes and let it sit for 10 minutes and then I released the steam manually ... My problem is that the beans are a little over cooked and most have burst. Is this the cooking time? Or, the fact that I was impatient and didn't wait for the little pressure valve to go down on its own? Thanks for any advice you can offer. Angela in Cincinnati
