12 quarts seems awfully small for a canning pc. If it's a regular pc, don't use it for canning - the times will be way off. For the tomato-based things you can, the boiling water bath is really the best way to go. Another option, if you have a big freezer, is to freeze them. I used to do a lot of canning and even have a canning pc here somewhere, but I switched to freezing a few years ago. Much less muss and fuss.
