I don't own any pc cookbooks but a number of people on this board love them. (especially by Lorna Sass) As far as cooking times & insert use, they will be somewhat longer when using one. When I close my pc, the water beneath the insert is rapidly boiling while the liquid & food in the insert is at a much lower temp. It takes a little more time to reach top pressure. Another factor in times will also be the size. My 10 liter takes a few minutes longer than my 4.5. I don't mind because of how much more food which can be cooked in it.
