I just turn the dial up or down as necessary. :) In other words, when I'm bringing the pot to pressure, I dial "High." When it reaches pressure, I dial back down to "Low," and start timing. Yesterday I had three pots going at once - one with steamed veggies, one with pinto beans, and the third with brown rice. I know how long it takes to cook each dish, and time it accordingly (everything is done at the same time).
