Subject: Now I can say that I do well under Pressure.

Hello,
I am a new convert to pressure-cooking. I was reading the pressure cooker article on here a while back; when I saw a relatively inexpensive pressure cooker at the store I remembered the article and decided to try it out. I purchased a 6qt Presto Stainless Steel pot, complete with a cooking rack and a pasta-straining lid. For $60, I figured it was a good way to introduce myself to this new way of cooking. If for some reason I didn't like it, than I would just have a really nice pasta pot.

When I got it home I pulled everything out of the box and began reading the instructions (This was, after all the time I had ever seen a pressure cooker; I didn't want to blow up the kitchen my first time out). I saw that I had to assemble the pasta lid by screwing the handle to the lid. Guessing the pressure lid also needed assembly, I Then tried to figure out how the little round handle (pressure regulator) attached to the pressure-lock lid. Confused, I continued reading and now understood how the thing worked.

I am a pretty good cook, and though I have never needed the help of a recipe book before, I felt this occasion called for one. As it just so happens I found out there is a cookbook store near my house. Yes you read that correctly, a cookbook store; a store that only sells cookbooks. They ordered Lorna Sass' book for me, "Great Vegetarian Cooking Under Pressure". I took it with me to the market and used it as a shopping guide. Literally I am thumbing through the book and planning my meals for the next few days, buying groceries accordingly.

I was intimidated at first, but now I know those feelings were unfounded. It's not difficult to use at all, actually it's easier than conventional cooking methods. There is no need to preach to the choir about how amazing this little pot is; I know all of you have already been there. It has been about a week so far and I am turning out some amazing dishes. Lorna definitely knows her stuff; her recipes are great and cover many different cooking styles.

I'm so impressed I am already looking into buying another pot, maybe two.
