I recently bought a Fagor Duo 8 qt. pressure cooker and have been loving using it. I am still a bit confused-- does the timing begin the moment the yellow button pops up, or does it begin a little later when the steam starts coming out? I was assuming the yellow button was the indicator, but now I am not sure. The only problem with the 4 dishes I have cooked in it was that my red lentil/yellow split pea soup scorched a little bit. Using the pop-up indicator means that I lowered the heat earlier,so thinking that it had too much heat doesn't make sense either!

One more question-- do you have to use oil to saute onions and garlic or can you do it dry or with a little of the broth before the other ingredients get added and the pressure starts?
