You are correct in all of the positives that you comment on 'waterless' cookers.
However there are very superior 'waterfree' cookers out there ( Saladmaster is one ).
What you want to find is a construction that goes all of the way up the sides as well as
the same on the bottom of the pan.

Then you want to have a temperature control system that WILL allow you to open the
'Valve' after a 'seal' is created.

Vacuum cooking is the absolute best and healthiest way to prepare your meals.
Not only on energy, but flavors as well as nutrition ( John's Hopkins University ).
However you must be able to cook BELOW boiling ( a rattling lid is at boiling so is a
'steam vent') ... so be careful here.

DO be careful before you purchase anything. However, DO have a Saladmaster
presentation before you buy anything. Trust your own 'common sense' and the fact that
they run cooking classes for their customers.


'Waterfree cooking'm is the way to go. Be careful of the steel quality and where it is
manufactured ( you can buy a 'Rolex' watch in China Town for $25 dollars.)
316L Surgical Steel would not be used in the Dairy, Pharmaceutical
Food and Surgical Industry if it was not sanitarily necessary.
