Thank you, Guy, for your informative posts. Regarding purging the oxygen before cooking beans, lentils, oatmeal, etc.: you state that you hold down the top-valve "for a minute or two." Is there a way of telling when the oxygen is purged? Or does one just hold down the valve with a wooden spoon (my way of doing quick-release) for two minutes?
