Ingredients

• 2 cloves garlic minced
• 1/2 cup onion minced
• 4 stalks celery, chopped
• 4.5 cups vegetable broth
• 1 tsp chili powder
• 2 cup uncooked green or brown lentils (make sure to rinse and drain them first)

Instructions

• Add water to pan and cook garlic, carrots, and celery.
• Add potatoes and spices and cook for another 2 minutes.
• Add vegetable broth and increase to medium high. Add lentils and stir.
• Reduce heat to low and simmer uncover for 15-20 minutes.
• Add spinach.
• Serve over rice or pair with a sandwich!
