Interestingly, if you didn't eat meat because of religious preference, they would probably respect that. Needing to have a note from a doctor is ridiculous and I would tell them so.

But Kristy is right, in a world such as ours where we are the minority, you must provide your child with appropriate snacks.

And I guess it would be best to find a daycare that will respect your choices and wishes.

I think you'd lose a discrimination suit, and it would be stressful and not worth the trouble.

Those are my thoughts.
