Sorry to hear that you're having trouble with your picky eater!
As a long-time vegetarian and experienced NYC nanny, I know that
kids who don't seem to like anything are tricky.
Has she always been so picky (even before she had her animal
welfare epiphany?) Maybe it's just a phase. That said, maybe it's
not. some people have sensitive taste buds, or are weird about
textures.
If she likes avocadoes and tomatoes, do you think that could
stretch to tacos? Refried beans and rice are a good combo (or any
beans and brown rice), with corn is good too. Most kids seems to
like corn, and hard taco shells are just big corn chips.
Whole wheat pizza crusts are readily available. You can squeeze a
lot of veggies into tomato sauce. Keep that in mind for pasta too,
and stick with whole grain stuff. It has more protein and other
nutrients. BArilla Plus is a particularly good one, but experiment.
you never know what a kid will eat.
There are indeed cookbooks that show you how to "hide" veggies
in her foods. I tend to think that they should really be a last resort,
because you want her to have a healthy attitude about frutis and
veggies at some point. You know, think they taste good for their
own sake. I'm also a big fan of letting kids help in the kitchen.
Most kids will be more receptive to eating their own creations. You
could start with something fun, like fruity muffins, and then more
on to dinner foods. I've also heard that kids are more likely to eat
foods with fun-sounding names, and if they're cut into interesting
shapes.
ummm What else? From carrots you might make a stretch to
parsnips. Also sweet potatoes and winter squash have similar
flavors. Bean burgers? Sweet potato fries? You can also get breads
that have extra protein and fiber and stuff. I think i've reached my
limit on food ideas, but there must be great blogs out there.
On a separate note, try not to rely too much on dairy for protein.
People who do tend to get anemic, bc cow's milk has little iron.
