try a few of Dean Ornish's recipes - they were concocted by chefs. Another good strategy is to veganize foods they already eat. So they like chili? make it with fake-meat crumbles, like the ones Morningstar Farms makes. I know fake meat is not the best thing for you, but it's a good transition strategy - take the familiar and make it vegan. Do they eat spaghetti? try using part regular pasta, part whole grain, with just a little whole grain at first. Add veggies to the pasta sauce a little at a time. Lasagna? same basic idea: gradually shift the mix from regular cheese combined with some soy cheese, to all soy or tofu cheeze. gradually reduce the amounts of cheese at the same time, each time you make it. You're going to need to wean them slowly.Do they like Chinese or Thai food? now you're in clover, since you can make healthy stirfry dishes easily. gradually combine white and brown rice till they're eating all brown.
Another strategy is: crank up the spice! something has to replace the taste of grease and sugar. I tend to use a heavy hand with spices, especially southwestern, cajun, asian and hot thai spice. pick what they'll eat.
