Hi Jamie!! It sounds like such a dilemma, but honestly... it isn't. I have 4 very active boys, and I am allergic to dairy and soy like your son. My boys are sensitive, but quite unlike me, they don't need an epi-pen for having to try garlic ice cream at the garlic festival. Yes, I learned my lesson- an allergy is not a "diet" that you can "cheat" on, no matter how weird, interesting, or new something is. Anyway... we don't have soy or dairy in our diets, and my son broke his femur last year. No, not because of a lack of calcium, thanks. You try falling 15 feet from a tree branch you thought would hold you, and see if anything breaks. *giggle* :P He healed much more quickly than the doctor thought he would and the doc. never mentioned anything about my son's lack of, or need for calcium because he saw how nicely the bone healed. Anyway...things that we eat that have some calcium include: leafy greens, seaweeds, sesame seeds, almonds, beans (baked beans with blackstrap molasses are particularly good as the blackstrap molasses also has calcium), figs, dried apricots, raisins, and fortified juice. As for the fat, what about letting him eat olives instead of just adding the oil? How about avocados? Joel Fuhrman, M.D. has a recipe for a chocolate avocado pie sweetened with dates that has a nut and date crust that is so so yummy! It's in his book called Disease Proof Your Child, and may also be on his website. Nuts, seeds, and their butters, (provided he's not allergic) are sources of good fats, too. Coconuts are also a good source of good for you fats... you can use coconut oil for cooking, coconut milk in recipes, coconut cream for richness, shredded dried coconut in snacks... they offer a lot of possibilities.
