Absolutely get them into the kitchen with you. There is a book called Kids Can Cook which has really good recipes and is vegetarian with vegan alternatives. When kids cook themselves and pick out their own recipes they're much more likely to try new things. You might try making baked tofu, I have made it for omni kids and they like it really well. Bryanna has a simple recipe using liquid smoke and tamari, you just bake in slices until the tofu is browned and dry, it's really yummy. You might make it into "fingers" to make it more fun.

Marinade is 1 1/2 c. water, 1/4 c. tamari or soy sauce, 1 T real maple syrup and 1 t. liquid smoke to 1 1/2 lbs of extra-firm in the tub tofu. Bake at 400 until browned and fairly dry.

A juicer is a great idea because kids love to push the veggies into it and they might be more likely to try it. They usually like carrot juice and you can put small amounts of other veggies into it.
