Thanks for your question. The only accredited undergraduate academic nutrition program which includes holistic principles is Bastyr in Washington state (bastyr.edu)
However, there are no academic programs which offer specialty training in pediatric nutrition, much less with a holistic focus. Programs would cover pediatric nutrition in a "life-cycle" course that reviews nutrition principles for all age groups (pregnant, nursing, infancy, childhood, adolescence, adulthood and senior). Some programs could theoretically have a pediatric nutrition course.
Internships which have a heavy clinical emphasis would likely include a pediatric nutrition rotation.
The Masters Program I hear the most about is at the University of Bridgeport in Connecticut (bridgeport.edu). This program may include some holistic content also.
You could also buy a pediatric nutrition manual, such as one at eatright.org (click on "shop online", then "online catalog", then "pediatric resources".)
