Hi Heidi, The protein issues are non-issues. A variety of beans, nuts/seeds, whole grains and seitan (wheat gluten) would provide enough protein. I am also skeptical of the recommendation to avoid soy due to hypthyroidism. If iodine intake is adequate, soy should have no impact. Please also bear in mind this board is about careers. Mark
