Hi, I was wondering if you could shed some light on a topic that was raised by my lecturer last week. He suggested there was a strong link between Iron and polyphenol in terms of Fe absorbtion. Is this true and if so what would be the mechanism of such an interaction? It always seems to come back to the same principle of eating more plant-based foods no matter how complete our understanding of the chemistry, but it would be very interesting to know how such a process would come about.
