Hi Michelle, I am interested in trying to bake with spelt and other ancient grains. I hold a BSc in Nutrition and after learning about the grains in one course, I decided it might be fun to experiment with them. Do you have any suggestions for me to make my baked goods turn out better or is there anything I should keep in mind when baking with these grains? I would love to hear the actual food science explanations too if you have any. Thanks :)
