Thanks for your question/comments. There are only two good choices in the US, as I understand:
The School of Natural Cookery in Boulder, CO (http://www.naturalcookery.com)

The Natural Gourmet in NYC (http://www.naturalgourmetschool.com).

You might also Google "vegetarian cooking school" to see what comes up.
