I am in a similiar situation. I have taken baking classes and nutrition classes on my way to a BS in cultural studies (I don't think it will do me any good, but I'm almost finished). I decided to enroll in a commercial culinary school thats convenient for me for after work, and affordable.

Of course the program includes a lot of meat preparation, but I'm looking to just learn technique and than transfer my skills to a vegetarian/vegan cooking situation. I couldn't afford the gourmet cooking school in NYC, which does teach vegetarian/vegan cooking specifically. I'm hoping this works for me, the thought of looking at raw meat doesn't thrill me, but eventually I will be saving animals and changing people's mind about vegetarian fare.
