I'm sooo proud of you for having enough courage to start the program!
I did not hide my veg'ism, but nor did I object to every questionable "fact" presented. I picked my battles, and as time went on, I picked fewer and fewer. Voicing such objections will provide few benefits and potentially generate conflict that could ultimately put you on the professor's black list. In the grand scheme of things, winning such a battle will matter little to academic success, but the risks are much higher. I find it's better to work quietly, especially by example, and impress the professor and your peers with your natural skills and intelligence. In some cases, telling them what they want to hear may be necessary.
Also remember that the professor may not personally support everything in the book, and may not use it all that much.
Additionally, one can always refer skeptics to the ADA's position paper on veg diets (written by veg dietitians), accessible thru their website eatright.org
