I am sure you know about Delicious Choices, they made a wonderful array of vegan cheesecakes that you could order. They were amazing, you couldn't tell they weren't dairy. You might contact them if you still can, they went out of business a while ago and sold their recipes. I will say that one thing I didn't like is that they used the hydrogenated variety of Tofutti in their recipes and that's so unhealthy, I haven't tried their recipes yet but intend to with the non-hydrogenated variety. Anyway, they found (as most small businesses do) that it is pretty formidable to cover costs and price something reasonably and so you make enough money to make it worth your while. I don't know what they cost, my husband used to buy them for me occasionally, but I think it might have been in the neighborhood of $40 when shipping and everything was included, you have the extra difficulty of shipping something that needs to stay cold. You probably would gain much by talking to the people that did Delicious Choices, of course now that they are no longer doing the business I don't know how to get hold of them but someone here might know.
