Mark, Thanks so much for the encouragement! The business owner you mention isn't alone in her beliefs that a "plant-based" diet means a vegan diet. I suppose many people would be quite surprised to learn that the traditional Mediterranean diet is "plant-based" even though it includes fish and other sources of animal protein. I also suppose that they'd be pretty shocked to learn that various diet programs supposedly based on the Mediterranean diet are so far removed from it that the only way one can recognize the Mediterranean influence is by the use of olive oil and wine! I don't think that eating well and in a manner which leads to and maintains a healthy weight and minimizes risk factors for and the incidence of various diseases is rocket science. There aren't a lot of complicated rules; it's really pretty easy. The problem is that most people don't know how easy it is. They also don't know that by following many of these plans, they might lose weight, but at the expense of their health.
