My plans remain the same. My area of interest is heart disease and specifically heart disease in women, so women are the focus of my project.
Mark, a while back you posted ""There has been a fair amount of research on vegan diets. Research I've read suggests that vegans enjoy no significant health benefits as compared to those who eat small amounts (10-20% of calories?) of flesh. In fact, some research shows many vegans have vitamin, mineral or essential fatty acid deficiencies."
I've never believed that a vegan diet is the only healthy way to eat -- not even for those of us with heart disease. So, what I plan to teach isn't vegan, but it's very high in plant foods and very low in animal foods. It's nearly vegan. It's also simple, easy, quick and focuses on whole foods.
I plan to set forth goals (B/P <120/80, total cholesterol <150, etc.). I think some people are going to have to make more changes to reach those goals than others. Some people will also be willing to do more than others. But the more we do to reach these goals through diet and lifestyle changes, and the less we depend on medications to control the risk factors and symptoms, the less likely we are to suffer the consequences of poor health.
