J, This isn't my area of expertise, but my best guess is: 1) calculate total cost of ingredients (ex: $20) 2) list and calculate total annual costs of business, such as utilities, taxes, fees, licenses, utensils, gasoline, postage, insurance, training, etc, etc. 3) calculate estimated total annual hours available for business. For average self-employed person, that would be about 1,000 hours per year. 4) divide total costs into total hours to arrive at a base fee per hour. for example, $20,000 total costs into 1,000 hours = $20/hr 5) calculate total prep/baking time, then figure your hourly fees (3 hrs x $20 = $60) 6) add ingredient costs to hourly fees (total $80) Hope that helps.
