TO BE A HEALTHY VEG'N!! Although I still think the veg'n market is only a small piece of the nutrition market, there is opportunity. Unfortunately, too many veg'ns are junk-food vegans, deceiving themselves into believing that the animals' health/welfare is all that matters. However, an unhealthy, sickly or overweight veg'n who presents a poor health image to the public achieves little for the animals. Prospective nutrition professionals looking to support veg'n diets need to understand that the absence of animal foods is not, by itself, sufficient to ensure proper nutrition. Being a healthy veg'n involves eating more than veggie burgers, potato chips, vegan cookies and soda. Prospective professionals need to research nutrition needs and nutrient intakes of veg'ns from reliable sources, and be able to translate their research into specific recommendations. Based on my experience, there's a lot of room for improvement in veg'n eating habits, and thus some opportunity for nutrition professionals. Mark Rifkin, MS, RD, LDN
