Thanks for your reply. The quote does not mention nutrition counseling, only being a "health counselor"---- whatever that is. And in many states, that term may not be defined.
Additionally, one would have to look at the law/regulations to see what is defined, what is allowed with licensure and what is prohibited without licensure. I'm not familiar with NY dietetics regulations. However, Maryland regulations specifically state that the licensee must have completed an ADA-approved or similar program, subject to review by the state. I suspect NY regulations may be similar.
Another possibility is that the school MAY have decided to push the envelope by making claims which, in all probability, would not be reviewed by any state government until someone complains. In many states, enforcement may be lax or non-existent.
Also, take a look at who accredits the Institute. If the accrediting agency is themselves an "alternative" agency, the state likely does not recognize the beneficiary of the accreditation.
