Thanks for your post. The answer is in three parts:
1) whether the program is ADA-approved. I'm not familiar with all the approved programs, but I suspect the Institute is not on the list. Check the ADA website at eatright.org click on "Students" then "Approved programs".
2) the laws of NY state. Most states will only license those who've completed an ADA-approved program or a similar program from another organization at cert-nutrition.org Those who are not licensed are prohibited from performing nutrition counseling; many states also prohibit unlicensed people from performing nutrition education as well. Check with the NY State Board for Dietetics and Nutrition at 518-474-3817.
3) how well NY state enforces the rules. Many states don't have good enforcement mechanisms in place, allowing unlicensed practitioners to continue operating. However, as nutrition becomes more recognized as legitimate therapy, various forces will demand that the states crack down and enforce the law. I suggest that you be on the right side of the law.
