Mark, thanks for the great information. I am now seriously thinking of taking the standard approved nutrition curriculum somewhere on an undergraduate level, course by course as I can work them in. I already have a BS in chemistry from some 20 years ago, but I had a lot of C's in my chemistry and higher math classes (you know, C stands for Courageous effort for even taking the *&%$ class!) I guess that kind of discouraged me from re-entering another science curriculum. I do great in humanities but not so great in those hard sciences. A couple years ago, I read a book called Healing with Whole Foods, by Paul Pitchford, which renewed my interest in nutrition. It combined eastern and western concepts and was really cool (Hey, maybe some would consider that holistic nutrition). I am now vegan so I think I'd appreciate nutrition more now, in my 40's, than in my 20's. Thanks again, Margaret
