Hi Vegmom, In my undergrad program, there were no veg'n students or staff, although one of the students is a former veg'n, having converted back to meat for her husband. I think the campus pop is around 7-10 thousand. In my internship, a few (out of 37) other interns were veg'n or semi-veg'n. In my clinical rotation, one of the trainers (a staff RD) was veg'n. In my Public Health rotation, my preceptor was veg-sympathetic. I was able to select a veg'n non-profit (Veg. Resource Grp) with RDs on staff as my elective rotation site; everyone is vegan. Contact them to determine if they can accommodate a distance intern. For the most part, I was unique in my veg'nism during much of my experience. Although my veg'nism brought certain challenges which cannot be minimized, for the most part I was able to bring positive insights to others; I think some of these challenges also made me emotionally stonger.
