Vicki, As far as I know, all ADA-approved nutrition/dietetics programs include food service mgmt. This is because many RDs manage hospital/clinical facility food services, as well as consult for such facilities; many hospitals likely require RD status for managers. I took 2 such courses in food service mgmt, and 2 in food science. I admit it's not my prime area of interest either. From what I know about the Certified Nutrition Specialist certification, the relevant org'tion (the CBNS, at cert-nutrition.org) does not require such food service mgmt, but they do apparently require a Master's Degree in nutrition. On the other hand, perhaps your career goal does not fit with either of these. Can I ask what your career goal is? Perhaps I can offer additional suggestions. Mark Rifkin, MS, RD, LDN
