There's really no way to get around a nutrition/food science course without addressing meat and dairy. My intro nutrition/food science classes were so large that I just found individuals who thought in a similar manner as I and hung out with them. I took these over twenty years ago, and so much has changed in how the topics relating to vegetarian nutrition are handled. We had a whole whopping class hour (maybe) to cover intro veg nutrition, and in a clinical nutrition class I believe I had a week's worth course time to cover this topic. I had mostly chemistry-oriented classes during my junior and senior years, so the material was pretty dry, but I did have to take courses on the manufacturing of dairy products and of meat products. I just took the materials about the chemical properties of each and went on from there. I really have never had to draw upon these in my work, but I had to take the courses anyway. I did take an elective course in "Animal Food Production" through the Animal Science department, and I took it to understand how food animals were treated and how the process went from field to fork for the animals. I took this course so I could talk to people intelligently about the process (aka slaughter.) It was definitely an eye-opening course... Michelle
