Subject:         Vegetarian Food Science

Hi, all. My name is Michelle and I hold a BS degree in Food Science from the University of Minnesota, Twin Cities. I am a food scientist/technologist/chemist by trade, with a focus creating whole grain items (cereals, breads, other baked goods) more shelf stable, especially for "non-traditional" grains such as millet, quinoa, spelt, rice, etc. I have worked in the past in developing formulas, as well as in quality assurance. I currently am an at home mother, but still work here and there as a vegan chef Southern California, always refining -- and redefining -- my skills.

There is a growing demand out there for individuals to work in vegetarian food science (not to be confused with nutrition science, which is different), especially with the growing demand for more and more vegetarian-based foods. If anyone would be interested in this career area or in vegetarian culinary science, you can email me directly or post a question on the board here and I can try to answer it for everyone to see.
