VegMom, I took two food science (cooking & food experimentation) classes, where I was lucky enough to avoid handling animal parts (altho not lucky enough to avoid seeing it or smelling it). Foodservice is required as a routine part of ADA-approved internships. In my foodservice rotation, preparation of chicken and fish was required. I also served pizza, chicken, pork, fish to customers. In addition, I assisted in receiving and storing all types of non-veg'n and veg'n food products. Fortunately, the foodservice rotation was only 5 weeks. No biochemical tests were included.
