I completely know what you mean about having to sit through a Dairy or Beef council supported nutrition class. I had enough trouble just sitting in an Agriculture (required) class my freshman year and keeping my mouth shut about sustainability and the wasting of our croplands. However, I did learn their points and their information and their studies and it inspired me to do my own studies which strengthened my ability to 'argue' it out w/ them. And then I went and marriaged a farm kid and learned to keep my mouth shut about it. But what better way to fight a battle than to hang out with 'the enemies' (please don't take the word 'enemies' the wrong way, like I said, I married one of them and love him to death) and learn their reasonings/rationales behind their diet recommendations.
