Since the heated air is not as hot as the oil, most
likely the process of air popping doesn't generate
the same level of acrylamides.

Undoubtedly air popped is a better choice - as
if you are going to eat a potato you are better
off with baked than french fried.

But your still heating a starchy carbohydrate to
a relatively high temperature.
