I do not recommend the use of "oils" as they all are highly refined and processed and concentrated. A natural, whole foods plant diet can supply all the fatty acids you need.

Of all the foods to avoid heating, oil would be the number one, so if you were to use an oil, I would not recommend you to heat it.

Any oil is refined.

There is a lot of misinformation about canola oil circulating on the internet. What is available toda is a distant cousin of the rapeseed oil that has been hybridized specifically to remove any potential toxic acid, lower its saturated fat content and increase and balance out its essential fatty acids.

Canola oil is the oil that was used in the famous Lyon Heart Trial and the subjects who received the canola oil had a 50-70% lower risk of recurrent heart disease.

If you were to line up all the available oils and rate them on the level of saturated fat, omega 6, omega 3, omega 6/3 ratio, canola would come out best.

Now, I am not recommending you use it, but nutritionally speaking, it would come out the best.
