Annelise, I too enjoyed Jeff's speech...reading the labels and ingredients on foods has always been a pet peeve of mine. If I have done the math right, the percentage of fat of the vegan gourmet cheese alternative is 87.5% (70 fat calories / 80 calories). He recommends around 20% fat. He also said that the sodium guideline is a 1:1 ratio, which I understood to mean is that the sodium test is passed if the sodium per serving is equal to or less than the calories per serving. In this instance, sodium is 120 while calories is 80 (1.5:1 ratio). Both the fat and sodium tests fail. What about the ingredient list test? At 87.5% I bet there are some oils or other high fat substance near the top of the ingredient list. Is that right, Jeff? Boy, this is fun! Bethany
