As you have noticed, exercise can help lower BP problems but it is not a solution.
My thoughts...
You havent told me what your weight and/or BMI is.
BMI- Your weight (in lbs) x 703 divided by your height (in inches) divided by your height (in inches)

bread, even home made whole grain bread, is very calorie dense and easy to overeat on. My guess is, it is a major contributor to your overconsumption of calories.

Fruits are around 250-300 calories a pound and vegetables around 100-150 so they are probably not the problem.

You may want to consider just making some daily adjustments to stabilize your calorie intake on a daily basis instead of trying to compensate one day a week for your indlugence on the other days, which for most people, doesn't work.
While there is some interesting new research on the benefits of Intermittent fasting, it is not being studies in the manner you are describing your intake,a nd for many, may be difficult to do on a regular basis.
