Jeff, with a product like frozen peas couldn't you just rinse the salt off? I know with can beans I usually rinse them in a colander before addng them to whatever I am adding them to. Maybe it doesn't get rid of all the salt but doesn't this get rid of most of it? After watching your presentation and seeing your quidelines for sodium content the product that had me dumbfounded the most was canned tomatoes, but having more than one brand of them in the house I also realized that there is a big difference between brands. A huge difference!
