Hi Jeff;

I didn't forget to mention those things, I chose not to as I thought that the spread of nutrients I mentioned already made the case that vegetables will give you a boat load of nutrition for your calories.

I got through cycles of enthusiasm for making sure I get vegetables in at lunch and dinner. I know from my own experience I really can't eat 3 cups of vegetables on top of my regular meals ( usually one cup of cooked legumes and one cup of cooked grains ).

One cup, yes, 3 cups, no. I just don't have the room.

This conversation is building up steam in me for a new a vegetable enthusiasm cycle.
