but, you forgot to mention that those 9 cups also provide

1.67 grams of Omegas 3s (the AI from the NAS is 1.6 gms/day) so you just exceeded your Omega 3s on broccoli alone :)

46 grams of fiber
9.4 mgs of iron
295 mgs of magnesium
6.3 mgs zinc
22.5 mcg selenium
20 mgs of Vit E

and on and on and on.

Now, redo it, and use like 2 cups broccoli, 2 cups bok choy, 2 cups kale, 2 cups collards and whatever else to make it to 500 calories

Oh, and BTW, you could split the 9 cups up between 2-3 meals which makes it much more realistic. 3-4 cups at a time might be easier for some.
