I'd love to include more vegetables in my vegetarian diet but run into difficulties in the face of the sheer volume that needs to be consumed to constitute 33% of one's daily intake of 1500 calories, especially if starchy vegetables are excluded from that figure. If I consume more than about 200 calories [excluding starchy vegetables] then bloating and abdominal discomfort become serious issues. Also, are there any other vegetables apart from potatoes, pumpkin, parsnip, sweet potato, yams, broad beans and peas that fall into the category of "starchy vegetables"? What is the definition of a starchy vegetable? Many thanks for your expert opinion.
