The soft plastic bottles are typically made from polyethylene and are extremely inert. I would avoid using PVC, but the other plastics typically used are safe. Polycarbonate has some extremely good mechanical properties, but isn't as inert as PE. To keep the leaching down, make sure you don't let the water sit in the container for weeks at a time.
