I noticed the nice side effect of easier clean up too.
I've been counting calories since January, and in the process of getting the most food to eat per my calorie allowance I have mostly stopped using oil.
I am amazed at how much easier it is to keep my kitchen clean ( unless I get distracted and use my smoke alarm as a kitchen timer ).
I think the amounts of oil most cookbooks ask for are unnecessary, either for utility or taste.
There are several good substitutes for baking.
Many no-oil and reduced oil salad dressing recipes.
With a little practice you can even learn to cook an onion or start a curry with 1/3 teaspoon of oil instead of a tablespoon. Divided over several meals or portions that is nothing to worry about.
