Thanks, for the info. I always try and keep fats and sugars low and eat whole foods. However, a few weeks ago 3 coworkers were retiring (one with diabetes & two others who could stand to eat better) they were going to be given a party featuring a Costco cake. I made cakes since mine use less sugar and fat (substituting fruit purees, bananas, & and a bit of nut butter) and thought I could reduce the remaining sugar even more if I used fructose. Topped with fresh unsweetened fruit, I know these were healthier than the Costco cake, the bulk of which ended up languishing in the lunchroom refrigerator after the party. In future I’ll just use the ½ cup of sweetener and figure that it’s a special occasion and for this audience, it’s still a big improvement.
