reply I have to suggest you look at 's
August 2007 newsletter for a well written well referenced essay on why no oil and a thorough explanation of how to cook without it. I think this and one of Caldwell Esselstyn,MD's books or lectures which can be found if you google them on line would emphasize the health benefits of no oil. I personally have been eating only unprocessed fresh fruits, vegetables, whole grains (less than before) and legumes with effort to include more green leafy vegetables than ever. We didn't see the weight loss to any great degree until we ditched the olive oil.
We get fat in all the foods and much of it from nuts, seeds and avocados. I sprinkle pepitos (pumpkin seeds) pine nuts, black or white sesame seeds, and other nuts like walnuts, pecans, almonds on salads and stews. There is also oil in flax seeds and flax seed meal. I think if you add these whole food sources in you should get plenty of fat.
I am not a nutritionist, but I have been reading extensively for some time and I am an RN. I have compared my health and weight both while vegan, omnivore and vegan again and there is a difference. I gain considerable weight if I eat animal products and my joints ache and I was noticing hair loss. Now that I am vegan again and am restricting my intake of refined foods and oils I do not feel the joint aches in my wrists, knees, feet from osteoarthritis, and my hair is fine. I don't take hormone replacement and I have no menopausal symptoms to speak of. I have lots of energy (I work out at the gym) and I have not developed type II diabetes which runs in my family and I had gestational diabetes myself.
I'd be interested in what Jeff has to say about it.
